In a large pot, cook your tomatoes, peppers, jalapeños, carrots, onion, celery, garlic and parsley until very soft (check after 30 minutes). Use a blender or food processor to puree in batches. Strain through a fine mesh sieve and put back in your pot before adding the sugar, lemon juice, salt, Worcestershire, horseradish and hot sauce if using. Bring to a boil. At this point the mixture is ready for canning or refrigerating if you’ll be using it within a few days. It’s delicious with the addition of vodka, beer, or even on it’s own!
