Project Charlie’s Stewed Tomatoes

DIRECTIONS:

Bring a large pot of water to a boil and add your tomatoes for 30 seconds.  Remove and place in an ice bath.  Peel the tomatoes and remove any stem or core before cutting them into large chunks.  Combine all ingredients in a large pot.  Bring the mixture to a boil and then simmer for 30 minutes.  At this point the tomatoes and ready for canning, freezing or enjoying fresh!

INGREDIENTS:

20 medium sized tomatoes
4 t salt
1 t sugar
1 T fresh parsley
1/2 c bell pepper, chopped
